Speedy Beignets

1 cup water

1 cup (2 sticks) unsalted butter

2 Tablespoons sugar 

Large pinch of salt

1 cup flour

4 eggs

Oil

Powdered sugar (lots!)


Put water, butter, sugar and salt in sauce pan and heat to a boil, stirring as you go.  Reduce heat, add flour and stir until it looks like cream of wheat and starts pulling away from the sides of the pan.  Cool for 5 minutes.Use mixer (hand or standing) to beat in eggs ONE at a time.  Chill dough for one hour. Heat 2 inches of oil in cast iron pan (or something similar) to 370-degrees.  Drop batter by tablespoon or cookie scoops into oil.  Turn them in oil so they brown on all sides.  They are done when the dough starts to crack and form a seam.  Drain on paper towels and while warm sprinkle with powdered sugar, lots of it.  Serve warm.
