Trader Joe's has a new Ube Mochi Pancake and Waffle Mix.
If you've never heard of ube, it's a purple yam from the Philippines.
This gluten-free mix blends ube puree with rice flour. And when you combine that with water, eggs, and melted butter or oil, it creates a pastel batter.
Once you finish cooking up your pancakes or waffles, you'll get a "sweet, chewy breakfast treat" that's a brown-ish color on the outside and purple on the inside! How fun! Imagine cutting into what looks like a regular pancake and then seeing purple!
