This tasty dish comes from Listener Michelle, our first winner of the KOST Cocina recipe contest!
According to Michelle: This is a very simple and delicious recipe. It can be made vegan/vegetarian by substituting the cheese with vegan cheese and the hamburger with protein crumbles.
1 ½ c. orzo
1 (14 oz.) frozen chopped spinach
2 (14.5 oz.) cans diced tomatoes
2 T. orange juice
2 T. olive oil
1 t. dried marjoram
2 c. feta cheese
1 1/2 lbs. hamburger
Brown hamburger. Drain. Set aside.
Bring a large pot of lightly salted water to a boil.
Add orzo and spinach; cook for about 5-7 minutes. Drain.
Mix together: orange juice, olive oil, marjoram and tomatoes.
Stir in pasta and spinach; browned hamburger and feta cheese.
Bake at 375* for 20-25 minutes.
Makes: 12 servings.
