In less than 25-minutes, you could prep & cook a yummy dinner with Ellen K's simple recipe. You will need:
- ½ cup grated Parmesan cheese
- ¼ cup butter, softened
- 3 tablespoons mayonnaise
- 2 tablespoons lemon juice
- 3 tablespoons chopped green onions
- ¼ teaspoon salt
- 1 dash hot pepper sauce
- 2 pounds skinless halibut fillets
Here are the steps to preparing this heavenly dish:
- Step 1 - Preheat the oven broiler. Grease a baking dish.
- Step 2 - In a bowl, mix the Parmesan cheese, butter, mayonnaise, lemon juice, green onions, salt, and hot pepper sauce.
- Step 3 - Arrange the halibut fillets in the prepared baking dish.
- Step 4 - Broil halibut fillets 8 minutes in the prepared oven, or until easily flaked with a fork. Spread with the Parmesan cheese mixture, and continue broiling 2 minutes, or until topping is bubbly and lightly browned.

5 green onions, chopped
2 cloves garlic, minced
2 tablespoons butter margarine
2 tablespoons olive oil
1.5 lbs boneless skinless chicken breasts, cubed
3 tablespoons lemon juice
3 tablespoons minced fresh parsley
1 teaspoon lemon-pepper seasoning
1 package spaghetti
Parmesan cheese to top
In a large skillet, saute onions & garlic in butter & oil until tender.
Stir in the chicken, lemon juice, parsley & lemon-pepper.
Saute for 15-20 min or until chicken juices run clear.
Meanwhile, cook spaghetti according to package directions; drain.
Add to chicken mixture & toss.

Easy potato tacos.
Cook potatoes any way you'd like. I like to cook them the way I do for breakfast. Cut small and cooked enough so they're soft to eat. Once cooked, smush the cooked potatoes in a bowl (kinda like mashed potatoes) and stuff them in a corn tortilla. Pre-heat the corn tortilla (in a towel in the microwave) or over fire so the corn tortilla softens and bends. Deep fry the taco or bake for 15-minutes at 350 degrees. You want the shell crunchy. The potatoes are already soft.
Once the tacos done, stuff it with whatever you like: lettuce, tomatoes, cheese & avocado! Ta-daaa! So good! Beans and rice were on the side but these tacos are pretty fulling in itself.

Cheesy Chicken Monterey
1 package of Knorr sides rice (or make your own rice)
1 can corn (drained)
1 can black beans (drained)
1 can chopped green chilies (undrained)
1 pound boneless skinless chicken
1 cup shredded monterey jack cheese
Prepare the rice, stir in the corn, chilies & black beans. Saute the chicken (add seasoning as preferred). Top the chopped chicken over a bed of rice, finish it with a layer of shredded cheese. Voila! Dinner is ready!
